recipe - veganized chocolate chip cookies

my grama makes super delicious chocolate chip cookies. she brought them over at christmas but i couldn't eat any because they were full of butter, and eggs. i could not go the rest of my life without those cookies so shortly after christmas i asked my grama for the recipe so that i could veganize them. i finally did a few weekends ago (as i mentioned in my video) and i got some...interesting results.
i forgot the brown sugar, then when i pulled out the brown sugar to maybe try to add some, it was solid as a rock! this has been happening to my brown sugar all the time. i think i need to get a good container for it.
anyways...i added some agave nectar to make up for the lack of sweetness that would have come from the brown sugar. bad idea...agave is a liquid sweetner (like a syrup) and it made the cookies super runny. oops! these flat as a pancake cookies tasted soooo good...but you couldn't really pick them up without breaking them into a million pieces. a million delicious pieces but still, not ideal.
the next few batches i added a bunch of extra flour until the cookies held their shape on the tray. they turned out much better. still delicious, but next time i'm going to make sure i use brown sugar.

so after all that...here is my veganized recipe!

Preheat to 350º
2 1/2 cups sifted cake or pastry flour
1/2 tsp salt
1 tsp baking soda
1 cup vegan butter or vegan shortening
3/4 cup brown sugar
2 egg replacers (i used 4 tbsp ground flax + 6 tbsp water to replace 2 eggs. mix flax and water and let it sit for a few minutes before adding to the rest of your recipe)
2 tbsp hot water
1 tsp vanilla
1/2 pound chocolate chips (i used organic, vegan chocolate chips)
3/4 cup cane sugar (the recipe originally called for granulated sugar so you could use that if you want)

Sift flour once, then measure, then sift together with salt and baking soda.
In a seperate bowl, cream butter, then add all sugar and cream throughly. Add egg replacer and beat until mixture is light and fluffy. Add hot water and vanilla, then add sifted flour mixture. Add chocolate chips.
Drop by spoonfuls onto greased cookie sheet.
Bake approximately 15 minutes.
Makes approximately 4 dozen cookies.

Let me know if you try them. They are super yummy (even if you forget the brown sugar)

  1. I love chocolate chip cookies! If your brown sugar is hard, put a piece of apple or a piece of bread in with it for awhile and it should turn soft again!

  2. They look like they turned out way better than my last attempt at baking cookies. Mine just turned into ridiculously sugary cake-like lumps which were kinda hard to stomach, haha. Maybe I'll have another go with this recipe. Thanks for sharing!

  5. These look delicious, i'll have to try it!!

    As for the brown sugar, at most grocery stores they sell these little things that come in the shape of bears and other novelty things such as hearts, flowers, etc. They're brown and they're like...bricks. I'm not sure what they're made of. But you put them in with your sugar and it keeps it nice and soft so it doesn't clump up! It's a great investment! I just wish I could help more by remember the brand name or something haha.

  8. thanks for the brown sugar tips! i'm going to try the bread/apple tip and maybe look for some of those 'bricks', haha, at the grocery store! i should video tape myself asking someone who works there for them. i can picture the strange looks already.

  9. The bread trick really works! And the bread doesn't go moldy, just hard.

    Those "brick" things are little terracotta disks (or teddy bears or hearts), they're pretty cheap and you can use them for a million years.

    Down with hardened brown sugar! :)

  14. To keep your b.sugar staying nice, soft and fresh. Put a slice of bread in the container. The bread will soak up all the stuff that makes your sugar hard. Then the sugar will be nice and soft, and your bread will be hard. (:
