the cheesecake stands alone.


here is the recipe for the chocolate tofu cheesecake i made. it's realllly good. strangely i think it tastes a little like banana bread.

Prep time: 15 min
Preheat oven to 350° F

crust:
2 cups graham cracker crumbs
1/4 cup maple syrup
2 tbsp apple juice
2 tbsp canola oil
Filling:
1 lb firm tofu, rinsed
2 bananas
1 cup maple syrup
1/2 cup vanilla soy milk
1/2 cup almond butter
1/3 cup cocoa powder
1 tbsp fresh lemon juice
1 tbsp vanilla
1 tbsp white miso ( soybean paste: i found this in the refrigerated section of an asian market)

Crust: Stir together crumbs, maple syrup, juice and oil. Press into bottom of lightly greased 9-inch (2.5 L) springform pan.  Bake in 350°F (180°C) oven for 10 min.  Let cool.
Filling: Rinse tofu and cut into medium sized pieces.  In food processor, puree tofu until smooth (this may take awhile). Add the remaining ingredients and blend until very smooth.  Pour over crust. Bake for 55 min ( it took me about and 1 hr and 10 min) in 350°F oven.  Let cool completely. Cut with serrated knife.

I didn't take a photo while the cake was whole. i'm lucky i got one at all.  I've shared this a lot and we've eaten quite a bit at home too. it's super good.
