brownies...yum

hello saturday!
last weekend i made some delicious brownies! the recipe is from an awesome cookbook Vegetarian Basics...which i can't find at the moment, haha. i neeeed to find where this cookbook is hiding in my house. luckily i had this recipe typed out so i didn't lose it.
here's the recipe for anyone who loves yummy treats...some of the ingredients seem strange but trust me...these brownies are amazing:

Prep time: 20 min
Preheat oven to 350°F
Cooking time: 45 min
Makes 24 brownies
2 tbsp fresh lemon juice
2 cups vanilla soy milk
2 cups unbleached white flour
2 cups cocoa powder
2 cups granulated sugar
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 1/2 cups dried pitted prunes
1 tbsp packed brown sugar
8 oz (250 g) firm tofu, rinsed and quartered
2 tsp vanilla
1/2 cup coarsely chopped pecans
Add lemon juice to soy milk; set aside. In large bowl, stir together flour, cocoa, sugar, baking powder, baking soda and salt; set aside.
In another bowl, pour 1 cup boiling water over prunes; let soak for 10 minutes.
In food processor, puree together prunes, 1/4 cup soaking liquid and brown sugar until a smooth paste. Add tofu and vanilla; puree until smooth. Add 1 cup of the soy milk mixture; blend well. Add to dry ingredients in two additions alternately with remaining soy milk, mixing well with wooden spoon after each.  Stir in pecans.
Spread batter evenly in lightly greased 13 x 9 inch (3.5L) cake pan. Bake in 350°F oven for 45 minutes. Let cool on rack. Cut into squares.

*instead of stirring in the pecans i just sprinkled some on top*

  4. Yum! Lovely. I think the prunes probably give a really nicer texture and 'fudgeeness'! This is a great recipe to have, especially for people with dairy allergies too. Love the new banner, great hair!x
