sooo delicious

hi! i'm so excited to see all the new faces around here and i can't wait to pop over and visit all of your blogs :) i hope everyone had a good weekend! on saturday i made something delicious...here it is.
they are vegan peanut butter cups! the recipe is from the book 'the kind diet'. it's a cookbook and it also has a lot of info on eating animal products. i like it :) this is the first thing i have made from it...and i think it's the least healthy thing in the whole book, haha. oh well it was super yummy...here's the recipe

Makes 12


1/2 cup Earth Balance butter (vegan butter)
3/4 cup crunchy peanut butter (unsweetened and unsalted)
3/4 cup graham cracker crumbs or 10 graham cracker squares
1/4 cup maple sugar or other granulated sweetener
1 cup grain-sweetened, non-dairy chocolate or carob chips
1/4 cup soy, rice or nut milk
1/4 cup chopped pecans, almonds or peanuts

Line a 12-cup muffin tin with paper liners.

Melt the 'butter' in a small saucepan over medium heat. Stir in peanut butter, graham cracker crumbs, and maple sugar and mix well. Remove the mixture from the heat. Evenly divide the mixture, approximately 2 tablespoons per cup, among the muffin cups.

Combine the chocolate and milk in another pan. Stir over medium heat until the chocolate has melted. Spoon the chocolate evenly over the peanut butter mixture. Top with chipped nuts. Place in the refrigerator to set for at least 2 hours before serving.

**i used regular white granulated sugar (bad for you, oops), and i was a bit short on graham crackers so i had to put them in the freezer to get them hard...but...they were still sooooo good.**

    i made a few dozen for a holiday party and they were gone in a min.

    the chorizo tacos from the book are delish too!
